Since there does not appear to be a syslog add-in for WHS 2011 (correct me if I am wrong), I am looking for recommendations for a free or inexpensive syslog server I can run on WHS 2011. I would like to be able to log data from my ATT U-verse router and Cisco SB wireless access point, HP printers and other syslog capable devices to monitor for network anomalies and diagnose device issues.

Don't bother. You'll just waste your life digging into log files :) Just kidding. Sorry, I don't know of such a product.

Server 2008 will do the job just nicely.

I am sorry I don't understand; is there a syslog server built into Windows Server 2008 and by extension WHS 2011? I have not found anything like this documented. What I am seeking is a syslog server application I can install onto my WHS 2011 box. If this is unnecessary please enlighten me.

You could check out Kiwi Syslog Server.
